Transform your Tummy Thyme toddler tubs into 'adult' meals

Did you know you can create 'adult' meals for your little ones using Tummy Thyme toddler meals?  Here are a few ideas I came up with in my home kitchen.  Easy peasey.  It's all about socializing children into family meal time.  Try it!  Then send me your recipe ideas I can share with our Tummy Thyme family. 

 TURN OUR SHEPHERD'S PIE INTO MINI AUSSIE MEAT PIES!

*Makes 4 pies

Ingredients:

2 x 4oz Tummy Thyme Shepherd's Pie tubs, defrosted

1 x sheet frozen puff pastry, partially thawed

1 x egg, lightly beaten

Method:

Preheat oven to 425'F

Prepare/lightly grease mini pie tins (we like this one)

Using a 4 inch diameter round cookie cutter (we use this one) and cut out 8 pastry rounds. Press 4 into the pie molds.

Divide the mince mixtures among pastry cases. Brush the edges with the egg wash and place the 4 remaining pastry rounds over the mixture.

Press with a fork to seal the edges. Brush with the egg wash.  Using a sharp knife, make a small cross in the top of each pie.

Place pies in the oven and bake for 20 to 25 minutes or until golden.

Serve with tomato sauce (aka ketchup!)

 

ARANCINI WITH OUR RISOTTO WITH PARMESAN, SQUASH & ROSEMARY

*Makes 9 arancini

Ingredients:

2 x 4oz Tummy Thyme Risotto tubs, defrosted

1/3 cup x flour (placed in a bowl)

2 x eggs, lightly beaten (in a bowl)

1/3 cup x fine breadcrumbs (spread out on a plate)

Method:

Preheat oven to 350'F

Prepare a baking tray with non-stick baking paper

Using wet hands, shape a heaped tablespoon of risotto into a small ball

Dip the ball into the flour and then shake off the excess

Dip in the egg, then roll into the breadcrumbs, pressing to coat

Place on the prepared tray

Repeat with the remaining risotto balls, flour, egg and breadcrumbs

Spray the arancini with olive oil spray and bake for 20 minutes or until crisp and golden brown. 

 

EASY TURKEY BURGERS WITH OUR TURKEY CHILI & BROWN RICE TUBS

*Makes 8 turkey burgers

Ingredients:

2 x 4oz Tummy Thyme Turkey chili with brown rice tubs, defrosted

2 x eggs, lightly beaten

3/4 cup x breadcrumbs

1-2 tbsp x olive oil

Method:

Preheat the oven to 375'F

Prepare a baking tray with non-stick baking paper

In a bowl, fold the eggs and breadcrumbs into the turkey chili until mixed well

If the mixture is too loose, add extra breadcrumbs

Allow the mixture to sit for 5-10 minutes for the breadcrumbs to absorb any extra liquid

Shape a heaped tablespoon into 8 patties

Add the oil to a sauté pan and heat oil over medium-high heat

When hot, add the turkey burgers. Cook for 2-3 minutes and then turn over (about 6 minutes total).

Transfer the burgers to the baking tray and further cook in the oven for 10 minutes or until firm and cooked through.
