Frozen yoghurt bark to enjoy on hot days!

Frozen yoghurt bark is a great snack for little fingers on hot days!!
The trick is using a really good quality full-fat Greek yoghurt and a combination of fresh fruit and nuts or seeds to make it just as nutritious, as it is tasty!!
Ingredients:
2 cups full-fat unsweetened Greek yoghurt
2-3 tbsp of honey or maple syrup (or sweetener of your choice or no sweetener at all)
1 tsp vanilla essence (alcohol-free)
1/2 cup fresh fruit of your choice (we love diced mango, pineapple, strawberries or raspberries)
1/3 cup nut/seeds (i.e Hemp seeds, crushed pistachios, macadamia nuts, slivered almonds or even granola mix)
1/4 cup desiccated coconut
Method:
Prepare a baking sheet with baking paper.
Mix yoghurt, honey, vanilla & coconut in a bowl.
Spread out evenly on your baking sheet (about 1/4 inch thick).
Evenly sprinkle your toppings over the yoghurt, then cover.
Freeze until solid (preferably overnight).
Using your hands, break the bark into pieces & store in a container in the freezer.
