FRESH PESTO RECIPE FOR BLW

The beauty of fresh pesto is that it is bright, herbaceous & SO easy to make. With nutritious ingredients like fresh basil, pine-nuts & garlic, it makes for a wonderful addition to finger foods. You can use it as a sauce over pasta or grains, as a spread on toast fingers, or you can dip vegetable spears (like steamed carrots) into pesto for added nutrition & flavor!
I will find any excuse to use my mortar and pestle, but a quick whiz in the blender will also do the trick! Just don’t blend for too long though or the basil leaves will oxidize.
Ingredients:
1 oz fresh basil
1 garlic clove
1/4 cup pine-nuts
1/2 cup parmesan
1/4 cup extra-virgin olive oil
pinch sea salt
Mortar & Pestle method:
Grind garlic & salt until minced.
Add basil & crush until a paste forms.
Add pine-nuts & pound until combined.
Then stir through parmesan & olive oil.
Store in airtight container in the fridge.
Blender method: pulse basil, garlic, salt & pine-nuts until a paste forms.
Move to a bowl & stir though olive oil & parmesan.
